Ceviche

Ceviche is my number one summer snack. It’s easy to make, healthy, and always a crowd favorite.


 

Ceviche

Gather the following ingredients: DSC_0012
  • 2 lbs pre-cooked shrimp (no tails)
  • 4 large tomatoes
  • 1 red onion
  • 3 avocados
  • 3-4 limes (juice used)
  • 1/2 cup chopped cilantro
  • 2 tbsp minced garlic
Method:
  1. Chop and mix all ingredients except the avocado; more lime juice and garlic can be added to taste. Pieces can be small or chunky – either way it will taste amazing! Chill for a couple hour for flavors to mix.
  2. Before serving, cut and mix in avocado. Dip with a favorite corn/pita chip.
  3. Enjoy!

*This particular day, I didn’t use shrimp, and just made a little bite-size amount for an afternoon snack. Otherwise, this recipe makes a big bowl of ceviche & usually serves 4-6 people comfortably.
