Happy Tuesday! The sun is shining, the birds are chirping, and spring is on the way ๐
Yesterday, [after running three miles], I cleaned out our fridge and was disappointed in my grocery shopping skills. After looking for ingredients to whip up a green drink & coming up empty handed, I decided to make another healthy snack.
I am not even going to pretend healthy banana oatmeal muffins were my creation. There are SO many recipes out there to guide you through making this protein packed snack/breakfast. I found a lot of options & combined a couple of my favorites into one recipe, [basically because ingredients were limited!]

Healthy Banana Oatmeal Muffins
Gather the following ingredients:
- 2 ripe, mashed bananas
- 1 cup unsweetened Almond Milk
- 2 eggs
- 3 cups oats
- 1/4 cup dark chocolate chips (optional)
Method:
- Preheat oven to 350 degrees. In a bowl, mix together bananas and Almond Milk until smooth
- Add eggs & oats.
- Fold in chips
- Spoon into muffin pan & bake for 15 minutes
- ENJOY YOUR SNACK!
