Yes, it is as delicious as it looks. On day 5 of my challenge I tried out a new, healthy recipe & I am in love <3
Our fridge is stocked with leftovers from the weekend, so tonight I wanted to keep things simple for myself, (Tony LOVES leftovers, I do not). I had seen this recipe swimming all over Pinterest a while back and promised myself I had to try it out. It’s very simple; doesn’t require a lot of ingredients or a lot of prep – an avocado, two eggs, chives & seasoning of your choice, and it has left me feeling full & happy.
Healthy eating is a goal of mine and Tony’s during the week. We aren’t HUGE health nuts, but are trying to be more conscious of what we’re putting in our bodies as we get older. I think we’ve been doing a good job of easing into this lifestyle. [I used to make everything with Velveeta cheese and some sort of pasta. NOT healthy, at all!]. We recently stopped our Sunday ritual of ordering pizza, simply because we were too lazy to make anything – yesterday we tried out a new chicken, quinoa chili recipe that was to die for!
Tony didn’t have any an avocado egg boat tonight, but he added that if he would have, hot sauce would be a must! I had to agree, although just the thought of hot sauce makes my lips burn and throat swell, [I’m not one for spicy food; sometimes I think nacho cheese is hot], but the boats did need a extra something-something. I added green onion and a pinch of sea salt and they hit the spot!
Recipe Steps (serves 1):
1. Gather an avocado, two eggs, and any sort of seasoning/flavor you want to add & preheat the oven to 425 degrees
2. Cut avocado in half & take out the pit. I scooped a spoonful or two out where the pit had been to make more room for the egg.
3. The tricky part: crack the egg and slowly let the yolk fall into the middle of the avocado first & let the rest of the egg spill into the middle and over the top of the avocado.
4. Sit upright in a oven safe dish and bake for 20 minutes [mine actually took closer to 25 for the whites to cook thoroughly]
5. After avocados have baked, sprinkle your desired seasonings and enjoy!
