No, this is not the acorn recipe stuffed with sausage and apple that has been circulating facebook and pinterest. If that’s what you came looking for, I’m sorry, but you will have to go elsewhere. However, I have tried that recipe, and it is delicious.
This recipe is a Kaylee original, so I’m going to try my best with measurements, but quite honestly, I didn’t really know what I was creating, so things may be off a bit. Good luck! It’s definitely a good one!
Quinoa Stuffed Acorn Squash w/ Roasted Almonds, Feta, & Honey Vinaigrette Dressing
Gather the following ingredients:
For the dressing:
- 2 tbsp honey
- 3/4 c olive oil
- 1/4 c apple vinegar
- 2 tbsp water
- 2 tsp pepper
- 2 tsp salt
For stuffed squash:
- 2 medium sized acorn squash
- 1 c cooked quinoa
- 1/2 c coarsely chopped almonds
- 1/2 medium, white onion, chopped
- 2 tbsp minced garlic
- olive oil to drizzle on squash when cooking before stuffing is added
- 3 tbsp feta cheese, crumbles
Method:
1.Preheat oven to 400 degrees F
2. Slice off top and bottom of squash. This should be a thin slice, getting rid of the handle. I made the mistake of cutting a little too deep into the squash and had holes on the bottom. It’s not a huge deal if this happens, but it’s easier without your stuffing falling out the bottom!
3. Cut squash in half down the middle, so you have two bowl-shaped halves. Scoop out and dispose seeds. Place on cooking sheet, drizzle olive oil, salt and pepper to taste, and stick in the oven for 45 minutes.
While they’re cooking..
4. Whisk together ingredients for dressing & set aside. This will separate, so whisk again before mixing into squash mixture.
5. Drizzle olive oil on skillet over medium heat. Cook chopped onion and minced garlic. When tender, combine with cooked quinoa in a mixing bowl.
6. Heat skillet with 1 tablespoon olive over high heat and add chopped almonds. Roast for 4-5 minutes, stir occasionally. Remove and place over paper towel and dab extra oil/liquid until dry. Mix in quinoa mix.
7. Add feta cheese crumbles & 3 -4 tablespoons of dressing, (whisk first!). You may want to add more, depending on how your mix is looking. I liked enough dressing to prohibit the quinoa from drying out.
8. Once squash is cooked, remove from oven, and scoop mixture in center. I really made sure they were full as full can be.
9. Cook for another 20 minutes.
10. Remove, let cool a 5 minutes, drizzle a bit more dressing over each half, & serve!
