Tony and I have a love for seafood. This recipe took a little creativity & the mixing of three different recipes I’ve made before, but it showed up with some power! The flavors were out of this world and it is one of my favorite meals yet!
Salmon Spinach Sandwich w/ Cucumber-Feta Sauce
Gather the following ingredients:
For the sauce:
- 2 cups plain Greek yogurt
- 1 cucumber, grated
- 1/4 crumbled feta cheese
- 1/4 tbsp oregano
- 1/2 tbsp onion powder
- 1/2 tbsp garlic powder
For the sandwich:
- 1 lb pound salmon
- 1/2 tbsp olive oil
- 2 cups spinach
- lemon wedges, to taste
- Kosher salt and pepper, to taste
- Whole wheat sandwich thins
Method:
- Mix together sauce ingredients and set aside in refrigerator – let sit for an hour for flavors to mix.
- Preheat oven to broil & line a baking sheet with parchment paper.
- Place salmon onto prepared baking sheet & drizzle with olive oil; season with salt, pepper, & lemon to taste.
- Broil salmon until pink, [5-7 minutes], & flip for other side. Let cool and break into 1/2-inch pieces.
- Assemble sandwich by spreading cucumber sauce on either side of sandwich thin, add salmon and spinach to your liking, and ENJOY!
