After a nice, little break, I decided to make my way back into the kitchen & have a new recipe for you to try!
Tony & I were both ready for some healthy, home-cooked meals after vacationing and eating out every night. It took me a while, [between countless loads of laundry & trying to meet my goal of attending yoga 12 times this month], to meal plan & get to the grocery store.
My love for pasta has not disappeared; [I occasionally treat myself with a luncheon at Noodles & Co and devour the Wisconsin Mac & Cheese], however, trying to eat healthy, noodles and carbs rarely pop up in our dinner menu. Tony & I both agree that sometimes eating greens & proteins just don’t leave you feeling FULL and satisfied. After much discussion on this topic with my other pasta, lovin’ cook-of-a-friend, Natalie, I decided I really needed a spiralizer in my life. Natalie frequently cooks with hers, has made me meals, & continually told me how much I would love using one…….
& then one day, soon after my two year mark, a spiralizer, ordered from Amazon, appeared on my doorstep when I returned home from work. [I have said it 100 times, but I’ll say it again – I have the bestest friends in the world – Natalie, you doin’ too much 😉 ].
My first attempt at using this new toy was a tad challenging, only because I never read directions & just assumed the zucchini would magically turn into noodles with a twist of my wrist, but this attempt definitely didn’t fall short of anything other than fantastic! Tony said, “Kayls, we should ALWAYS make pasta like this,” five different times; between those words and licking his plate clean [literally], he must have really dug it. 🙂
