quinoa veggie wrap

I came home from work one Monday night with an itch to try my new panini press & created a delicious, healthy wrap for dinner that both Tony & I loved ๐Ÿ™‚


Quinoa Veggie Wrap

Gather the following ingredients:

  • 1 cup cooked quinoa
  • 3 medium sized tomatoes
  • 1 can drained kernal corn
  • 1 can drained black beans
  • 1 red pepper (use could more then one, color by choice)
  • 1 cup shredded cheese
  • 1/4 cup chopped green onions
  • 4-6 Flour/Wheat tortillas
  • Fixings: sour cream, guacamole, green salsa

Method:

1. Plug in panini press & heat to medium heat**

2. Chop pepper & mix with cooked quinoa, as well as drained corn, beans, & shredded cheese in a mixing bowl.

3. Chop tomatoes & green onion & set aside. These will be used to garnish wrap before serving.

4. Take one tortilla, scoop a couple spoonfuls of mixture into center. I fold in the sides before I roll tortilla so the good stuff doesn’t fall out – especially if you’re using your panini press!

5. Place wrap onto panini press, (you may be able to cook two at a time), & cook until light brown and crispy (5-7 minutes)

6. Once wrap is cooked, remove onto plate & drizzle with green salsa, top with tomatoes & green onions. Serve with sides of sour cream and guacamole.

Enjoy!!

**I really wanted to use my panini press, but these could be baked at 350, or sizzled on the stove, as well!
