Another day, another recipe.
Last night I whipped up a delicious acorn squash recipe, [I actually made two different recipes, but one was definitely better than the other], and it was another favorite dish in this household.
There is a recipe that has been all over Facebook and Pinterest, it is an acorn squash recipe with sausage, apple, onion, and a varietal of spices and seasonings. I tried it out last night and it was tasty. It was sweet, salty, & very fall. I followed this recipe. Give it a try!
However, there was an even better recipe I mixed together, & I will say: it was allllll mine, [excuse me while I brush my shoulders off].

Tony has been on this big health kick, in particular, trying to cut down on sodium. As I was putting together the acorn sausage recipe, it dawned on me that sausage is pretty high in terms of sodium levels, [but it’s so good!!]. So instead, I threw together an alternative recipe and it was delicious! & simple!
cooked quinoa
roasted almonds [which, ahem, I did myself]
feta cheese
& a homemade honey vinaigrette dressing
YUM!
