Yesterday, [after running three miles], I cleaned out our fridge and was disappointed in my grocery shopping skills. After looking for ingredients to whip up a green drink & coming up empty handed, I decided to make another healthy snack.

I am not even going to pretend healthy banana oatmeal muffins were my creation. There are SO many recipes out there to guide you through making this protein packed snack/breakfast. I found a lot of options & combined a couple of my favorites into one recipe, [basically because ingredients were limited!]

Healthy Banana Oatmeal Muffins

Gather the following ingredients:
  • 2 ripe, mashed bananas
  • 1 cup unsweetened Almond Milk
  • 2 eggs
  • 3 cups oats
  • 1/4 cup dark chocolate chips (optional)
Method:
  1. Preheat oven to 350 degrees. In a bowl, mix together bananas and Almond Milk until smooth
  2. Add eggs & oats.
  3. Fold in chips
  4. Spoon into muffin pan & bake for 15 minutes
  5. ENJOY YOUR SNACK!

    I love simple, healthy go-to snacks. I’m going to try adding a couple scoops of protein powder to this too!
