Today the temperature in Minnesota hovered around 20 degrees. The sun poked it’s head out of the clouds, giving Ace the perfect, warm, sun-streaked napping spot in the living room. It almost felt as though it was spring; for a second, I forgot about snow on the ground!
Welcoming March tomorrow can’t come soon enough. Once March arrives, I always feel as though winter is over. Now, believe me, it’s normally not over. We can get buckets of snow in March. However, in the past, March has always brought Spring Break trips and hope for warmer weather. I am counting down the days for Spring to grace us with her presence.
So today, after Tony and I indulged in watching a couple episodes of House of Cards [season three came out last night!] and did some light cleaning, I decided I needed a snack. A snack that would make me think of summer, it’s warmth, and all the bliss that comes with it. You can find the full recipe, which serves 4-6 people, in my greens tab.
Ceviche For One (without the shrimp)
Gather the following ingredients:
- 1/2 of an avocado
- 1 lime (juice is used)
- 1 small tomato
- 2 tbsp chopped red onion (or to taste, I used a couple of ‘peels’ like the picture shown)
- 1 tbsp chopped cilantro
- 1tsp minced garlic
Method:
Combine all ingredients and eat with your favorite corn or pita chip! Yum Yum!
